Ingredients

500 g (1 lb) boiled octopus
320 g (12 oz) rice
100 g (3.5 oz) beans
25 g (0.9 oz) carrot

25 g (0.9 oz) turnip
25 g (0.9 oz) chard stalks
1 dl of aioli sauce
Salt and pepper 25 g

For the sofrito criollo
15 g (0.5 oz) of green pepper
10 g (0.3 oz) of red pepper
15 g (0.5 oz) of chive
1 garlic clove
1 small red chili pepper
10 g of pulp of spicy pepper
1 dl of olive oil
1 tablespoon of chopped coriander
Salt and pepper

Directions

Put the beans in water to soak the night before. Clean the vegetables. Cook the beans together with the prepared vegetables to low heat for 40 minutes or until cooked. Chop the green pepper with the onion, the garlic clove and the chilli pepper. Sauté in a pan with olive oil. Add the pulp of the red pepper and the coriander (pic. 1). Add salt and pepper. Mix it with the beans. Strain the ingredients and put the broth to one side, the rice will be cooked in it for 14 minutes. Cut the octopus legs in diagonal (pic. 2). In one tray put the rice with the beans, in another tray put the octopus sliced with the vegetables, put the broth and the aioli sauce in another recipient.
